Gather ’round, children…

… and let me tell you the tale of the better than sex brownies. These homemade, from scratch, three-layered brownies are the 8th wonder of the world. They will part the Red Sea. They may have been known to cure the common cold. This is my super ooey, gooey treat whenever I’m feeling rough.

(Yes, I know that eating your feelings isn’t ideal. But I eat pretty well most of the time and know that one round of brownies is not going to completely fuck me up as far as diet goes.)

Brownies:

1 cup butter, melted
1.5 cups granulated sugar
1.5 cups brown sugar
1 TBS vanilla extract
4 eggs
1.5 cups all-purpose flour
1 cup unsweetened cocoa powder
1 tsp salt
1 cup semisweet chocolate chips

Preheat oven to 350.  Lightly grease a 9×13 baking dish.  Combine the melted butter, sugar, and vanilla in a large bowl.  Beat in the eggs, one at a time, mixing well after each.  Sift together the flour, cocoa powder, and salt.  Gradually stir the flour mixture into the chocolate mixture, until well blended.  Stir in the chocolate chips.  Spread batter evenly in prepared baking pan.  Bake 35-40 minutes, until a toothpick inserted in the middle comes out clean.  Cool on a wire rack.

Filling:

0.5 cup butter
2 cups powdered sugar
1 tsp vanilla extract
2 TBS milk

Cream together all four ingredients.  Beat until smooth.  Spread evenly over cooled brownies.  Refrigerate at least 1 hour until firm.  

Topping:

6 ounces semisweet chocolate chips
4 TBS butter

Melt chocolate chips and butter together.  Cool until spreading consistency.  Spread over chilled filling.  Refrigerate until topping hardens, then cut into bars.

Cut them into little pieces – they’re rich and decadent. i also recommend a glass of milk at the ready. Enjoy!
